#007/360 Millet Puttu

Note: Any Millet flour can be used. Best with Foxtail Millet Flour (Navane)
Preparation Time: 10mins
Cooking Time: 15mins

Ingredients

1. 1 Cup Navane flour. If you have millet grain, use a mixer to make it into powder.
2. 1/2 Cup grated coconut
3. Water
4. Salt to taste

Method
1. Fry the flour for 5mins in a fan. After that let it cool.
2. Sprinkle salt water on the flour.
3. Fill the flour in Puttu vessel. (optional add a layer of grated coconut in between Flour)
4. Steam cook for 10mins.
5. Eat with grated coconut+jaggery OR Chutney.

#006/360 Nookalu Upma or Udalu Millets Upma

Ingredients:

1 cup udalu
2 tbsp green gram dhal
2 tbsp grated coconut
2 cups water
2 red chillies
few curry leaves
1 tea spoon each rai, jeera and urad dal
2 table spoons oil and a little ghee
1 tea spoon salt as per taste

Method

To prepare udalu: Soak 1 cup of udalu for 1 hour. Wash and drain in a strainer

Heat OIl and a little ghee in a pan. Add rai,  jeera,  urad dal. When mustard starts spluttering and udad dal changes color to golden brown add red chillies and curry leaves. Add a little green gram dhal and grated coconut and fry for some more time. Add 2 cups of water and let it boil. Add soaked udadlu and close the pan with water lid on it and cook on slow flame. Stir now and then so that remove from flame once udalu is well cooked.coand add 2 cups of water (1 cup of rava needs 2 cups of water). Add salt to taste, mix well and let it boil.

The udalu can be replace with Rice Rava upma/Biyyam for variations. Serve hot with coconut chutney or mango pickle

Tip: While preparing this upma use thick bottomed vessel. Some times the upma in the bottom may be roasted

#005/360 Millet Rava Dose

(We Generally throw away leftover Dose batter, as it turns Sour. We can make Rava Millet dose with it even if it is sour.)

Ingredients
1. 2 Cup Millet Dose Batter. Millet batter
2. 1 Cup Rava
3. 1 Cup Nava powder. (If you have millet than use a mixer to make it into fine powder.)
4. 1 Grated carrot
5. 1 piece grated coconut
6. Some copped coriander n curry leaves
7. 2 Chillis & Salt to taste
8. 1 spoon Jeera
9. 1 Spoon Ginger
10. 2 spoon oil

Method
1. Heat oil in pan, add Items #2 to #9 and Shallow Fry 5mins
2. Add this fried mixture to Millet Dose Batter & mix it.
3. Millet Rava Dose Batter ready.

#004/360 Millet Instant Dose

1. Dry Fry the millet powder for 2mins

#003/360 Idly Dose batter

Note: Barnyard(Oodalu) / Little(Saame) / Kodo(Arka) are good for Idly Dose. Foxtail(Navane) idly dose taste and colour is different.

Preparation Time: 10 minutes
Cooking Time: like normal rice
Soaking Time: 6 hours
Setting Time: 12 hours

Ingredients
1. 100gm Millet rice
2. 100gm Urd dal
3. Few spoons of Chipped rice (optional)
4. Salt to taste

Method
1. Soak Millet and Urd dal for 6 hours seperately. (Add Chipped rice if making dose batter, adds crispness to dose, it is optional)

2A. For Idly: millet n urd dal grind seperately. grainy grind.
2B. For Dose: millet n urd dal grind together. Fine grind.

3. Setting time 12hrs.
4. Add salt, pinch of baking soda. Batter is ready

#002/360 Plain Millet rice

Note: You can use any one of these millet Foxtail(Navane) / Little(Saame) / Kodo(Arka) / Browntop (Korale). Barnyard(Oodalu) is good for Kichadi, Pongal, Bese Belle bath.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Soaking Time: 1 hour to 3 hours
Serves: 2

Ingredients
1. 100gm Millet rice
2. 300ml water
3. Salt to taste

Method
1. Soak Millet for 1 hours to 3 hours. Millet absorbs water n expands, 3hrs is better, but minimum of 1hr is good.
2. Boil 1:3 water, i.e., 300ml. Once water is boiling add millet and allow to cook for 20mins
3. Add salt to taste
4. Strain the excess water
5. Millet rice is ready. Can be eaten with Sambhar, Rasam, Curd, etc Saame is esp good with curd & rasam. Navane tastes good with Sambhar.

Cooking Time: 20 minutes
Soaking Time: 1 hour to 3 hours
Serves: 2

Ingredients
1. 75gm Millet rice
2. 25gm Moong dal
3. 2 chilley
4. 1 small cup Grated coconut
5. 1 spoon Ginger paste
6. Pinch of Aniseed/Fennel (Saunf) powder
7. Some coriander leaves
8. Vegetables of choice carrot, beans, peas
9. 1 spoon Ghee for seasoning
10. Salt to taste

Method
1. Soak Millet for 1 hours to 3 hours. Millet absorbs water n expands, 3hrs is better, but minimum of 1hr is good.
2. Boil 1:5 water, i.e., 500ml
3. Once water is boiling, add millet
4. Parallely prepare seasoning heat ghee, add Ginger paste, vegetables, Saunf powder, chilley, fry for 2mins. Add this seasoning to cooking millet.
5. Add salt to taste. Let Millet n Seasoning with vegetables cook for 20mins. Low Flame.
6. Remove from flame add grated coconut n coriander leaves.
